Pumpkin Pie For one 9” pie
INGREDIENTS • 3 eggs • ½ t salt • 1 ¾ c pumpkin • ½ c white sugar • ¼ c brown sugar • 2 T butter • 1 ¼ c evaporated milk • 1 ½ t cinnamon • 1 t nutmeg • 1/8 t ground cloves • 1/8 t ground ginger
DIRECTIONS- 1. Heat milk and butter until melted. 2. Mix dry ingredients together thoroughly. 3. In separate pan beat eggs until mixed. 4. Add pumpkin and then spices and beat together. 5. Add warmed milk and butter and stir thoroughly. 6. Heat pumpkin mixture until slightly warm (not bubbly). 7. Pour in pie shell carefully. 8. Bake in oven at 400° for 45 minutes until filling is set and crust is nicely browned. Test center with toothpick.
Whipped Cream- Use this sweetened whipped cream topping for pie or serve with gingerbread, cobbler, or other desserts.
INGREDIENTS- • 1 cup heavy cream • 1/4 cup sugar • 1 teaspoon vanilla
DIRECTIONS- 1. Whip cream until almost stiff.2. Add sugar and vanilla; beat until cream holds peaks. 3. Spread over top of cooled pie or dollop individually.
