Many years ago for my fathers 50th birthday, I asked him where he would like dine to celebrate another year. I could tell he was hoping to get an opportunity to choose. His choice and a great one the Hotel del Coronado. I lived in San Diego for over 3 years and had never been to the hotel nor the restaurant, which FYI was built in the late 1800′s and boasts to be one of the only still standing Hotels built with all wooden pegs and nails. We haeded out not having any idea I would be enjoying one of the best dinners including the best soups I think I have ever had. That night was the first time I experienced my first taste of chilled soup. I LOVED It!
They served upthe most amazing soup thatll have real cravings for.. It was a Cucumber & Macadamia Nut Soup presented with a cup of chilled chopped cucumber topped with a strategically placed swirl of sour cream in the center making it look like a culinary masterpiece. A second favorite and yes it is chilled as well is Gazpacho. For those days where the heat is too much, enjoy this very tasty, light really hit’s the spot when chilled just right soup. So refreshing and healthy. I could almost live on it. This recipe I have courtesy of my mother who is the queen of 30 second appetizers. She is amazing to watch in the kitchen. Ingredients
Large (about 1 cup) Ice Cube
2 cup(s) Fresh Corn Kernels, (cut from 6 medium size (about 2 pounds)
2 medium ears corn) Ripe Tomatoes, cored and each cut into quarters
2 medium Seedless (English) Cucumber peeled and cut into 2-inch chunk
2 cup(s) Loosely Packed Fresh Cilantro Leaves
2. tablespoon(s) Fresh Lime Juice
Lime Wedges For Garnish, (optional)
3/4 teaspoon(s), 1/4 Salt
1 teaspoon(s) Ground Black Pepper
Hot Pepper Sauce To Taste
add half of a sliced avocado per bowl
Directions-In food processor with knife blade attached, coarsely chop all ingredients except lime wedges. If not serving right away, cover and refrigerate up to 1 day. Serve with lime wedges, if you like. I even keep extra for some great Bloody Mary’s for a lazy Sunday morning.
